Chef Andrés Villarreal trained under three Michelin-starred kitchens across Spain and Colombia before opening ARCA in 2024. His philosophy is simple: respect the ingredient, trust the technique, and let the table do the rest.
Every dish on the menu traces back to a memory — a market in Seville, a fishing village in Galicia, a grandmother's cazuela simmering on a Sunday afternoon. Nothing at ARCA is arbitrary. Everything is earned.
